Key Lime Pie

This version of Key Lime Pie is from the Men's Health Total Fitness Guide 2008 Muscle Chow. I didn't come up with this brilliant concoction myself & just because it is in the "Men's Health" doesn't mean women can't eat it too.
Okay here we go...
You Will Need: 
  • 4 sheets of low fat honey graham crackers crumbled
  • 1 cup oats
  • 1/2 cup applesauce
  • 1 teaspoon cinnamon
  • 3 egg yolks
  • 1 can fat free condensed milk
  • 1/3 cup key lime juice
  • 2 cups fat free whipped topping
To make it is so simple y'all.

Preheat the oven to 350*F.  In a large bowl, combine the cracker crumbs, oats, apple sauce, and cinnamon.  Mix well.

Pour the rest into a 9" x 1 1/2" nonstick pie pan. Use the back of a spoon to press it evenly into and along the sides of the pan to form a crust.

Bake for 15 minutes.


In a bowl, combine the egg yolks, condensed milk, and juice.  Whisk until smooth.

Reduce the oven temp to 250*F.  Pour the filling into the crust. Bake for 40 minutes, or until the filling is firm to the touch.

Let cool completely on a wire rack.  Refrigerate for 4 to 6 hours, or until fully chilled.  Top with whipped topping.

8 Servings.  Per Serving:  272 Calories, 7g  Protein, 53g Carbohydrates, 3g Total Fat, 1g Sat. Fat, 2g Fiber, 113mg sodium.

Let me say I was a bit skeptical of the applesauce and NO BUTTER myself.  But let me tell you this is an awesomely delish recipe.  It is a must try and probably a new staple in my dessert world.

Weekend RePlay

We had gone out Friday night for Mr. L's Birthday dinner at the wonderfully tasty & so unhealthy Hibachi Grill. And it was delish. Came home way to full to enjoy cake but made Mr. L blow out the candles anyway.  (You know the kids ate the cake!)
Saturday morning Mr. L surprised us all by saying we were going to the theater!  From that moment till the minute we got in the car Emma was talking about it.  "I am ready to go to the theater now. Is it time to go?" 

We saw Despicable Me.  That little lady sat on the edge of her seat throughout the movie and was so involved.  Jack & Cody were laughing & chowing down on popcorn the entire time.  Oh how I love that I can take my kids to the movies. And actually find it enjoyable.   You know actually able to watch the movie.  Not  taking  them out to pee. Not having to whip out my breast (although in a dark theater, still an uncomfortable situation to be in!)


Just before going into the movies we got a call from Papa. He said he was coming down from Vermont for the weekend. What exciting news for the kiddies.  So not long after getting home from the movies they pulled in.  We cooked out and watched a movie together.

Also when we got home I found that I had sold two of my Eat.Burp.Wash. &Repeat Sets. How exciting.  It almost paid for our movie outing. And Mr. L sold a video game later that day for $25.  Go Us.

Sunday we got some Subs & went over to our local nature trail but apparently I had my "mommy brain" on and I not only didn't have the battery in my camera, I had no memory stick too.  How useless is that.
Later we went out to a flea market browsing all the neat items & getting way too hot on a over 100 degree afternoon.  Purchased a $4 flower sifter, a dust pan & plums!










Everyone is tired out and red faced from our "treasure hunting" at the flea market.  Sitting in the shade while Papa continues on the hunt for something good.  He came back with some rusted to perfection rooster and other design hooks.
Jack was seemed to be enjoying his juicy plum while we waited to get back on the road.





Then we all cooled off with an ice cream at the Dairy Queen.  

Finished the weekend off with a movie and popcorn at home.  Tried to get the kiddies to bed on time to start the week off right.  It was a success.

This is our last week till track out.

Papa, Bonnie & Bella are headed back to Vermont & Emma keeps asking if she can go to "Bermont" to play with Bella.  Silly Emma.

Eat.Burp.Wash. &Repeat.


I've been so busy all this week cutting fabric, pining, sewing, turning it right-side out & top-stitching! Makes you truely appreciate the end product.
I cannot believe how cute my sets are coming out. Makes me wanna pop out a baby so I can burp um remember those days of burping the kiddies!   Seriously though, how cute are these sets.  Who doesn't love sock monkeys?


I know I am new to the Etsy thing & still trying to find my way some customer base and I am feeling like this new product line I am trying to get out there is something that someone would purchase.  I don't know, maybe I am biased.  I sewed it.  I really am proud of these sets though.

Eat.Burp.Wash.  &Repeat.  I am still not sure how I thought it up. It just came to me. I mean its a bib "eat", a burp cloth "burp" & a little washie "wash"  and of course you are going to "repeat" this process. About a million times.  How fun to be doing all these mommy tasks in style.

Weekend RePlay

Oh the joys of biweekly paychecks! (And we have thrown all of our money in the savings, at new tires for the HHR & at a trip to LasVegas!) So basically, the weekend before pay day means we do NOTHING, I am serious we only left the house Saturday morning to go to the library.  We brought back books & got some new ones.  We did do the storytime too, I am not sure why I bother, Cody thinks he is too cool for it, Jack only wanted to look at the books he picked out and Emma had to sit on my lap the whole time causing both of my feet to fall asleep.  After that though we stayed home, mainly in the house since it was a rainy & miserably hot weekend.
Mr. L mowed the lawn Saturday afternoon & about one hour later a thunderstorm came through.  Whatever happened to the days of freaking out completely and turning off & unplugging every appliance? Getting the candles ready and storing water so you can simply flush the toilet?  I guess the power down here is pretty f'n great because we have lived here for 3 years and have only had the power go out ONCE that lasted more then a little "brown out".  Or maybe the above mentioned freak out plan was just something we did in the northeast? hmm Not like I was going to shut down my computer and not be able to tweet & update my facebook status on what was happening with the weather.  Oh how the times do change.
We made it safely through and our power did not go out even when right in the back yard a giant tree was hit by lightening producing the loudest clap of thunder I've ever heard. The whole house shook so hard that a picture fell of the wall.  Later when I felt it was safe I went out and took some pictures of what mother nature had done to our tree.

I am so impressed with how they turned out & I am so excited to offer them in my shop. They include a super soft and cuddly bunny pal, a "burp in style" cloth, 2 little washies that are just perfect for a newborns sensitive skin and even a pair of booties.  It just such a great soft minky set.  All this for $50 and just like with all of my items they are shipped priority mail which is 2-3 days shipping throughout the United States. So great.  Sure to be a hit at your baby shower or a coming home gift for new mom & baby.









We ate these on Sunday afternoon after lunch... tasty treat, even if not roasted on the campfire!
And while Mr. L was out grilling us some tasty "pink fish" he played with Fenway who thought he had made his big escape when Cody & Jack ran outside all kinds of excited to see the watermelon Mr. L found growing out in our little garden.













I can't believe the way this watermelon is growing hanging above the ground and I hope it doesn't fall off the vine due to gravity.




I am so glad to have such a wonderful family that even when we don't have the money to go out and entertain our kiddies we are able to stay home and have just a great time together.  I love my family.

Oh and in closing I would like to say that Mr. L made me all smiles inside Friday afternoon when the kids and I all ran home from the bus stop and he walked slowly behind.  When we got to the porch he said with a big smile on his face "I was just watching you guys run and thinking how proud I am to have you guys as my family."  Yeah, I am pretty sure Mr. L is the best husband. Ever. And I know he's the best Dad.

Jacks First Day of Kindergarten

Today was the big day, that Jack has been counting down and waiting for since, well before Cody even started Kindergarten himself. So for a long time.  But as I told him the day finally came.  Mr. L and I packed the kids and backpacks filled with too many school supplies (I don't remember this from when I was a kid! Has to be Purell brand hand sanitizer!?) and drove down the road to our cute little school.  Hopped us all out of the car and Jack put on his extremely heavy backpack and huffed slowly as fast as he could down the steps and across the street to the school.  Walked down the hallway to Mrs. Mitchells kindergarten class. Room 305. Checked in and found his cubby.  Gave him a hug, Mr. L told him to let Mrs. Mitchell know how smart he is & we were on our way out the door and the little look on his face said he had no idea what to do next & why we were leaving him there. In that room. With those people.  Dropped our "big boy" Cody off at his class and out the door I went. Just us & princess Emma. Drove home, walked in the house and realized how silent it was. Wow. Silence. No Emma screaming at Jack, no Jack screaming at Emma. No pug barking at the kiddies. Silence. Ahh.   After Mr. L left for work, my question I once asked myself (Will this mean I get more done?) was answered.  For today, yes I actually got more done, I got the kitchen cleaned up in no time & the laundry folded, then I cut out two bootie patterns and made them, played around on the computer with Princess Emma and all this before lunch time.  I am not going to count on this. Atleast not daily. I am pretty sure some sort of energy came over me to get this amount of stuff all done before lunch time. (I almost mowed the lawn too.) Then Mr. L got home & took Princess Emma and I out for lunch, we went to Chilis.  Emma was so happy to go out "without the boooyyysss."  I am pretty sure Daddy isn't one of the boooyyyss.

We got home in plenty of time to play outside in the swimming pool & then head out to the bus stop to get our boys.  I wish I had thought to bring my camera.  Jack's first bus ride. He made it. Jack successfully made it through his first day of school.  Got on the right bus and actually had someone yelling out the window "bye Jack" as he got off. Popular.
Jack came running off the bus all happy and just Jack.  He did inform me that he cried. Someone did ask him if he knew where the title of the book was located.  But this is about all I have gotten out of him. Oh. And he can't wait to go back.  So all in all a good day, right?

I'm now a proud Momma of two school age children. What an accomplishment.  How fast time flys, where did the years go? Seems like just yesterday he was my little "Baby Jack."

Weekend RePlay

We had a really chill weekend... well not Mr. L. he had to work overtime all day Saturday (can't wait for that check) so that meant that the kids and I were at home doing alot of this...
Okay, well we didn't really sit and stare at each other all day... I did make pickles & brownies... sounds like a pregnant combo... but no I am NOT pregnant, if I was Mr. L. would have lots of questions and I would have lots of explaining to do.  
Seriously though I have waaay too many cucumbers coming out of my garden now & the neighbor is continuing to bring me more.  So I decided to make my own version of refrigerator pickles.. they aren't too bad either, they look pretty too. Vinegar, basil, garlic salt, salt, and sugar boiled then poured over the cut cucumbers in a mason jar.

Also, I made brownies.  From scratch.  Yes, I a former "Baker" had never once in my life made brownies not from a box. They were way better than the boxed mix & probably healthier... but we won't go there.









I even had time after the kiddies got to bed to make some super cute little burp cloths.  I am hoping since I purchased some insanely cute matchy, match fabrics from an Etsy shop & I cannot wait to receive them to start a cute little line of "Burp in Style" burp cloths to put up in my ButterBeans&ChicPeas, by BLauzonSews Etsy Shop.

Cute right? I would love to hear your inputs. I just ordered some gerber brand burp cloths that I plan sew fabric onto and make them "stylish." Burp in Style.

Sunday morning while letting Mr. L sleep in from his long day of overtime work the day before I let the kiddies watch "Up" which by the way is already on the Netflix on demand while I sewed up a little mini quilt.
I am really loving how it came out "i am not perfect" but still it is so stinking cute. Also listed it in my shop.








We finished up getting everything set for Jack's first day of Kindergarten on Tuesday.  I really hope he is ready for the big day, and that I am.  Just me and Princess Emma at home.
